GARLIC-MARINATED CHICKEN COOKED IN ALE WITH PARIS MASH

I don’t think too many blokes could go past ‘chicken braised in beer’ if they saw it listed on a menu. I was lucky enough to be cooked this very dish on a trip to Tasmania. First I helped in the making of a batch of Cascade ‘First Harvest’ beer using freshly picked hops. After the beer was sorted, my fellow beer makers and I headed to Rodney Dunn’s Agrarian Kitchen, which is a wonderful local cooking school that embraces ethical and sustainable farming of rare fruits, vegetables and animals. Rodney cooked some of his own farmed chicken in the previous year’s ‘First Harvest’ beer. The result was chicken that melted off the bone into a beautiful sauce. This recipe is based on the one he cooked that day and it goes perfectly with buttery potato purée. The only thing you need to accompany it is a nice Tasmanian beer to drink with it. Cheers!
